This Winter Menu is all about stepping up and refining our offers on your brunch options.
We continue to serve our pasta range with a swap from linguine to fresh thick ribbon Pappardelle that picks up the pasta sauce perfectly.

Here is the New Pasta Dish:

Beef Ragu Pappardelle.

Fresh pappardelle pasta, slow-braised Wagyu beef cheek ragu, crushed tomatoes, pangrattato, aged parmigiana, fresh basil, extra virgin olive oil.

Traditional, Bold and Flavorful.

Meet Joe, our headchef.

Being partly Italian and growing up in Southern Brazil where food and culture are deeply rooted, his childhood memory of food comes from the fresh pasta hand rolled by his nonna, fresh bread made by his grandma, salami and cheese from their neighbor's houses.

"We all know which house down the street has the best salami, cheese or pasta, we order from neighbors, because often their nonnas have the best recipes that beats the market food."

Tradition and heritage are huge parts in Joe's culinary journey, he believes the labour you put in making the food shows a great deal of respect towards locally grown ingredients, he is our pioneer of made from scratch process and small batch fresh makings.

"I don't really follow the hype and trend, I want to serve the kind of food that makes you feel like you're at home, in your grandma's kitchen, because that's where I grew up in. Authenticity will always be the biggest part for me here, in the kitchen."

He's been at Sage & Brew since December, and his favorite dish on our menu is the Bacon Benedict. Outside of the cafe, Rory is a stand up comedian who has been performing for over 15 years, and will be releasing his first special later this year. Make sure you say hi, and catch one of his shows while he's visiting our country!

We absolutely love his sense of humour that brings so much daily laughter and fun moments to our everyday routine, besides, his Eggs Bene is almost always perfectly cooked!! :)

It's quite a massive slab to feed the whole team, 66cm x 46cm, constructed with 4 sheets of Gluten Free Moist Buttermilk Vanilla Cake, 3 batches of Strawberry Swiss Meringue Buttercream, housemade Rapsberry and Strawberry Jam, topped with Whittaker's Milk Chocolate Dipped Strawberries and Fresh as Freeze Dried Strawberry Powder.

The whole piece is Gluten Free and Nut Free.

Cake orders welcome, would appreciate an at least 3 days notice in prior in normal circumstances, however I never really mind late night baking, quiet commercial kitchen with a bit of music and cake is always my Zen spot.

This is a tribute, to our beloved child and Olivia's loving sister, Xiao Shou (little beastie) who passed away peacefully on Thursday morning at the age of 16.

She's been with me since she's three months old, she spent my late teen, adulthood with me, she witnessed my graduation, motherhood, all the ups and downs. She's always staying on my lap doesn't matter how late I had to stay up to in my office.

She looked after Olivia like her own child and she's always there for Joe no matter how the day was like.

We will always carry you in our hearts full of love, and we will miss you every single day, for a very very long time.

Thank you team, for stepping out to support us at this very difficult time, thanks Rory for filling the sweet cabinet, thank you Jay for taking on an extra shift so I could have some time to process, thanks Danny for staying late, so Joe could go to the vet.

A peak into our prep process.

We get alot of customers looking at our cabinet and asking "do you make all these here?"

Yes we do, and not only the cabinet, all of our menu ingredients too, from smallest ingredients like herb oil drizzle to french toast syrup, we make absolutely everything from scratch.

You might hardly notice, but the garnishing bread crumbs on your pasta dish are made from fresh Sourdough bread, seasoned and baked in small batch to preserve the crunchiness. The stock used for pasta base is slow cooked with market fish bones for at least 3 hours. Rostis are made from peeling and boiling fresh potatos, shredding them, seasoning and hand pressing into the mould one by one.

The list goes on and on, the most of it has to be done after the service to make sure there's no interruption to the prep process.

We are proud of what we are doing here, even though it's damn hard work, every single day.

But we love your satisfaction after you finish your plate, we know a good dish counts every single bit on the plate, and that's just about our food attitude, nothing is too small to be made fresh. 👌
