Three years ago, we started the cafe with 1 full time and 1 part time. One month later, we had to let the part time staff go because we were doing so bad. I remember the day I did the talk, and I remember it was so difficult that I felt torn apart. That event is a good reminder for us to work extra hard everyday so that we don't have to come around the same circumstances again.

Three and half years down the road, we have a family of trusted team members, all of them have gone beyond their expected duties and responsibilities to help Sage & Brew grow, which we are deeply grateful from the bottom of our heart.

We know we are not perfect, but we are contantly working on improving our procedures and workflows, so we can provide you with a better service.
Because other than the food and beverages we serve, we want to make here a place that you feel at home the moment you step in and stay a bit.

So thank you for your support and patience, we are growing, and we will definitely do better tomorrow than we are doing today, and so forth everyday.

The kitchen where the magic begins.

I asked my six years old what is cooking, she said you had to grow your own ingredients to say you are really cooking. While it's quite impossible for us to grow everything on our own, we have tried our best to push limits and to do nearly everything from scratch in the kitchen at Sage & Brew.

Fresh whole market fish arrives, it's then filleted to nearly surgery precision by Ken and his Japanese carving knife. The fish bone is slow cooked with celery stalks and vege offcuts, the stock used in our pasta base. Carrot Puree is made from peeling fresh carrots, fresh fennel sliced and pickled in the house, herb oil made from fresh herb stems we don't used for garnishing.

Each ingredient's prep is time consuming, we stay late most of the time. It might look subtle on your plate, but trust us, nothing on your plate is without extensive thoughts, multiple trials and detailed prep process happening at the background.

But that's the beauty of it, and that's the way we cook it.
